Chef Steven Klein Nijenhuis has been the owner of Herberg Onder de Linden in Aduard since October 2016. His first own restaurant was In de Molen in Onderdendam, which he started in 2013 and where he received a Michelin star within a year. The Michelin star has also moved to Aduard.
At Herberg onder de Linden we work with the most beautiful products from nearby. Fruit, herbs and flowers from our own garden, honey from our own bees, vegetables from the permaculture garden Tuin voor Zwaantje, local game, bread from local grains and lots of game picked. The dishes are exciting because we ferment a lot and we have a preference for the intense flavors from Asia. We strive for a kitchen that is as sustainable as possible and because of this we make conscious choices in our ingredients. Almost everything local, no dairy and no beef and pork are examples of these choices. This results in a kitchen that is different from the rest with a lot of creativity.
