Seasoned hospitality entrepreneur Robert Adams starts a brand new hospitality concept together with his partner Edwin Kuipers: The RavioliBar. a modern single product concept linked to a wine bar. A map with a focus on quality, loosely linked to Italy. Ravioli is a healthy alternative within the fast kitchen segment. With many options for vegetarians, and attention to sustainability. On September 20, the first restaurant of a chain of twenty will open at Vismarkt 29 in Groningen. The formula will be rolled out throughout the Netherlands in a few years.
The Raviolibar
“We came up with the idea for the RavioliBar after coming into very positive contact with handmade pasta on a number of occasions,” says Robert Adams, “in Italy, every region, every family, has its own recipe. Often passed down orally within the family. Usually the grandmother is the proud holder of 'the only real right' recipe. And so it has been for centuries. The handmade pasta is often prepared and eaten on Sundays and public holidays. The whole family then comes together. What we noticed, moreover, is that it often concerns filled pasta. Usually some form of ravioli. Filled with beautiful and honest products. Ravioli is really a party. That's exactly what we've been standing for for years," says Adams.
happiness inside
Robert Adams: “Happiness inside is our motto,” adds Adams, “which of course starts with the ravioli: The content will positively surprise every visitor. But you will also be happy with a lively bar, where we emphatically combine a stay-at-home cafe with to-go. We see a tapas-like way of dining in front of us: You order nice antipasti, several bowls of ravioli, and you eat it together. Nice bottle of wine, carafe of water, what more could you want. Nice and informal and affordable. A portion of ravioli costs between €6,50 and €8,50 with us.”
Multiple chains
“We deliberately opt for prime retail locations – so not necessarily restaurant locations – with a lot of traffic,” concludes Kuipers. “In Groningen, for example, we are a hundred meters from Herestraat, prominently on the Vismarkt. For example, there is something to do at any time of the day, and we also offer a tailor-made offer at any time: From coffee to lunch; from drinks to dinner.”
Edwin Kuipers: “Like the Italian nunnery, we produce our top quality ravioli ourselves. Combined with beautiful matching wines and voilà: The RavioliBar! The concept does not yet exist in the Netherlands, and the way we put it – as a real bar – we are unique worldwide. The restaurant in Groningen is the first of a chain of twenty that will be rolled out in the Netherlands in the coming years. Very cautiously, people are already dreaming about a roll-out in, for example, Germany.”
