The business is small-scale and lends itself perfectly for a wonderful evening of casual dining. Because that is the intention when you join the business of the Sportel couple. Hospitality is of paramount importance to the couple. 'When people come to eat with us, we take the time for them', says Jeroen. 'The tables are only occupied once, we have relaxed jazz music playing and we try to create a kind of calm. Guests should not want for anything.'
Yellowtail Kingfish
Upon entering the restaurant Vive la Vie the guest is welcomed with various snacks, followed by delicious amuse-bouches. Everything is made in-house, with high quality products. Jeroen prefers to work with fish and shellfish. He thinks one of the most beautiful products is the Yellowtail Kingfish. A predatory fish bred in Zeeland that can be used perfectly for both raw and hot preparations. In addition, the chef likes to cook with scallops, langoustines or skrei (winter cod). But he also likes to include a nice piece of roe or poultry in the menu.
Cooking styles and wines inspired by travel
Jeroen's cooking style is best captured in classic French with an Asian twist. Inspired by the many journeys the duo has made. Lara adjusts the wines silently to this, with a clear preference for European wines. 'A light fresh style wine is always included,' she says. Jeroen does not have a real signature dish. "I just try to surprise guests every time," he says with a laugh.
After the extensive dinner you can step right into the vibrant nightlife, because everything is within walking distance. And if that wine arrangement was a bit too much, there are plenty of hotels to choose from.
Daily fresh without a menu and responding to the season
Vive la Vie works without a card. During the week you can choose from a 5, 6 or 7-course surprise menu. At weekends there is only a choice of 6 or 7 courses. The menu changes with the seasons. Depending on the offer, dishes from the menu are also changed. The kitchen can take into account allergies, exceptions and other wishes, if this is indicated at the time of booking. And reservations are definitely recommended!
