Wwhat's in? What's out? Summer drink, hype, wine for ladies and…? Rosé = rosé so let's not fool around with rosé. Of course we sell more bottles of this delicious juice one year than other years, but rosé has really found its place in the wine world (period).
Perhaps with nice weather a little better than with rain, but with a ray of sunshine we all become happy. Recently I tasted the Cabaret rosé during a heavy rain shower. Olivier Sumeire turns his vineyards in the southern French village of Trets into a series of beautiful rosé wines, including this delicious Cabaret. The grapes used are 30% cinsault and 70% grenache, which are stored at a low temperature immediately after harvest. In this way the light salmon pink color and refined aromas that are so characteristic of good Provence rosé are created. In contrast to the more exuberant and candy-like rosé, this pale pink Provence is very suitable for serving with refined meals and as a serious aperitif.
