After the summer success of 't Tuintje van Halbert, Restaurant Blumé surprises again with a unique, temporary concept: Souterrain 1634. A pop-up restaurant for the modern flexitarian, opened in the characteristic basement of Hotel Corps de Garde at Oude Boteringestraat 74.

The historic location exudes atmosphere – the building dates back to 1634 and served as a guardhouse for soldiers guarding Groningen's northern border. It's now part of Garde Hotels, which renovated the building in 2021 with meticulous attention to detail and history into a stylish boutique hotel.

Vegetables in the leading role
Chef Henrice Dijks (Restaurant Blumé) and Jarno Lucas (Hotel Corps de Garde) have jointly developed a refined menu that puts vegetables front and center. Guests can choose from six creative vegetarian dishes, with the option of adding a fish or meat supplement. The concept perfectly complements the growing trend of conscious and sustainable eating.

The intimate setting of the basement creates a personal, almost mysterious experience – a place where gastronomy, history and atmosphere come together.
